Oatcakes with Sardine Paté

Oatcakes with sardine pate dip

Most people have a tin of sardines in their cupboard that never gets used. Here’s a really easy and delicious way to use it up. Sardines are a rich source of omega-3 oils, which are good for heart health and can help to lower cholesterol levels. Just don’t forget to buy another tin!

Serves 2

Ingredients
120g tin sardines in oil
3 tbsp soft cheese
Juice of ½ lemon
Freshly ground black pepper
Cucumber slices
4 oatcakes

Method
Drain the sardines and place in a bowl. Mash roughly with a fork and then add the soft cheese and lemon juice. Stir well or use a hand-held blender to make a smooth paté. Season with pepper and chill in the fridge until ready to serve. 

Pile onto the oatcakes and top each one with slices of cucumber.
