Halibut with Fennel

Halibut and fennel

Fennel has a strong, distinctive flavour so goes well with a chunky white fish such as halibut. Fennel can help with weight management as it is high in filling fibre and low in calories. It contains substances which have anti-infammatory effects helping to reduce the risk of conditions such as diabetes.

Serves 2

Ingredients
2 tsp olive oil
Half a fennel bulb, thinly sliced
4 medium ripe tomatoes, diced
4 anchovy fillets, chopped
Fresh ground black pepper
250g halibut fillet
A handful of olives, pitted and chopped
A handful of fresh coriander leaves
A handful of fresh basil
A handful of fresh dill

Heat the olive oil in a medium frying pan and add the fennel. 

Sauté for several minutes until softened, then add the tomatoes and anchovies. 

Season and simmer for 10-15 minutes.

Add the halibut and olives, cover and simmer for a further 5-10 minutes until the fish is cooked through. 

Stir through with the chopped herbs and serve.
