Macadamia Nut Hummus

A bowl of macademia nut hummus

This tangy, fresh-tasting hummus is made with macadamia nuts, which are a good source of protein and fibre as well as vitamin and minerals such as B1 and manganese. Tahini is a Middle Eastern paste made from ground sesame seeds and is an excellent source of healthy unsaturated fats. It will keep in the fridge for 2–3 days. 

Serves 4

Ingredients
180g macadamia nuts, soaked in water for 24 hours, drained and rinsed
2–3 cloves garlic
3 tbsp lemon juice
4 tbsp rapeseed oil
2 tbsp tahini
Pinch cayenne pepper
Sea salt and freshly ground pepper

Method
Place all the ingredients into a food processor and blend until you have a smooth paste. Add a little water to loosen if necessary. Taste and adjust the seasoning and then transfer to a bowl. Cover with cling film and chill in the fridge until ready to serve.
