This is a versatile and useful dip that has the texture of hummus. The soya and peas give it a high protein content that will help you feel fuller for longer and regulate appetite.
100g frozen petits pois
100g frozen soya beans
100g artichoke hearts (from a jar), drained
2 tsp ground cumin
2 tbsp lemon juice
4 tbsp olive oil
Small handful mint leaves
Salt and freshly ground black pepper
Tip the peas and soya beans into a bowl and pour over boiling water to cover. Leave for 5 minutes, then drain well and tip into a food processor. Add all the remaining ingredients and pulse to make a rough purée. Season to taste and then spoon into a serving bowl. Cover with cling film and chill until ready to serve.
